It’s November, so of course I’m firmly entrenched in NaNoWriMo and walk around in my story several hours a day. In past years I’ve cooked ahead and stocked the freezer, but this year I honestly didn’t decide to do it until the week before. With packing and such, there was barely time for grocery shopping before NaNo started. Luckily, I accidentally made some smart purchases.
What follows is meant to be more of a formula than a recipe. You can use any fruits or vegetables, seasonings, and protein, making it easy to use what you have on hand. Here’s what I’ve done:
1-2 oz. left-over rotisserie chicken
1 oz cheddar cheese
A shake or two of garlic powder and tumeric
A splash of pomegranate balsamic vinegar
Chop the apple and onion, and saute in butter. (I’ve added mushrooms, too.) Add the chicken and seasonings and let it cook for a few minutes to heat the chicken thoroughly. Throw in the cheese, turn off the burner, and slap a lid on the pan to let the cheese melt.
That’s it. Total prep and cook time is under 15 minutes, making it ideal for lunch or dinner. Or breakfast, really. The main point is to fill up your pan with fruits and/or veggies and add a some protein. It’s surprisingly filling and super easy.
